Walnut Bread

Home baked bread to entertain this week end

I always feel at my best when I cook for my child, family and friends. And this recipe was given to me by my close friend Lisa. I tweaked it a little to get my favorite bread for an Apero - Walnut Bread 

Bread baking can be overwelming but this receipe is so simple it never fails

Ingredients

1 1/2 Cup of warm water
3/4 Tbsp of fast acting yeast (1 Packet)
2 Tbsp of maple Syrup or Honey
1/2 Tbsp of salt
1 1/5 Tbsp of Flaxseed Meal
2 Cups of white flour
1 3/4 Cup of Spelt or Rye Flour
1 Cup of Walnuts
1 Tbsp of Rolled Oats

I love it served with Cheeses, dips ... but toasted for breakfast with butter and Jam is also super delicious!

Instructions

  • Combine the warm water with yeast , wait 5 minutes and add the Mapple syrup, Flaxseed Meal, and Flours.Mix in mixer for a couple of minutes. You can knead it but no need - I don't. The result will be a sticky ball of dough. If dough still stick to side add a little flour untill it doesnt.
  • Lift dough out and place it in bowl lightly greased with olive oil. Cover with clean tea towel, let it rise at room temperature for 2 hours and then 2 hours in the fridge.
  • Use fingers to create a small hole in the dough and pour in walnuts and oats. Knead the dough on a foured work surface for 20 turns then shape loaf. Place it on your baking dish lined with baking paper, sift flour over the top to keep the dough moist. cover with glad wrap and let it rest again for 45minutes.
  • 45minutes later preheat oven to 218C* and place a metal or cast iron pan on lower rack (not glass or Pyrex). Have a cup of hot water ready
  • When oven is ready slash the top of dough -1/2 indh deep. Place it in oven on middle rack, then carefully pour hot water into the pan on ther rack beneath and close oven quickly
  • Bake for 25 to 35 minutes. Remove from oven and let rest on cooling rack. Let it cool completely before slicing for best results.
